I'm personally using it on my set of freebsd jailed boxes to provide quota-ing in a useful way, de-duplication of shared files in those quotaed trees, compression of things like the ports tree, etc. Subvolumes are sexy as hell in how you can have one filesystem, but give lots of different attributes to various bits and pieces.
